Rosehips - the nordic vitamin C boost
I can’t help it. I have to tell you my little secret. I LOVE ROSEHIPS, but to pluck them and clean them… well - not so funny. Maybe you already know this, but the seeds, when dry, itches like crazy - so make sure always to remove the seeds immediately when you clean this amazing beautiful, powerfull and super healthy fruit from the rosehips, most often growing by the beaches.
So what you see here is the result of hours of slow, meticular work, done in the summer days in Denmark.
They are full of Vitamin C, Vitamin A and Calcium. And are also good for people with arthritis.
I would recommend you to pluck as much as possible, the bigger and more deep orange they are - the better.
Clean them, and wash them with water so the seeds disappear.
I always make huge amount of RAW ROSEHIPS SALSA, you can roughly cut the rosehips, and what you do not use in the salsa, put them in the freezer for later use.
Here is my very simple recipe for Rosehips marmelade
1 kg clean and roughly cut rosehips ( I like you can chew and actually feel the rosehips).
350 gr sugar.
Some rosehips leaves - it adds to the “rose” flavour and are very delicious.
Slowly boil the rosehips as the sugar melts. The water covering the rosehips after you have washed them are enough, you do not need to add more. Slow boil for about 20-25 minutes.
Take them of and put the marmalade in clean boiled glasses.
